Even though Bison tastes similar to a high quality cut of beef, Bison stands out as being much higher in nutrition and protein.     1. Preheat skillet over medium heat.
    2. Add 1 tablespoon of butter to coat surface of skillet.
    3. Crumble ground bison in skillet once hot. Season meat with desired seasonings.
    4. Stir the meat around in the skillet to help it crumble as it cooks.
    5. Continue to stir and cook meat for 5-7 minutes or until meat browns and juices run clear.
    6. Use instant-read thermometer to check internal temperature has reached 160 F.


    1. Pre-heat grill to medium-high heat.
    2. Shape ground bison into 1/2" thick patties.
    3. Lightly oil grate.
    4. Grill 4-6 inches above medium hot heat/coals.
    5. Grill for 8-10 minutes or just until the pink has disappeared from the patties, turning once.
    6. Use instant-read thermometer to check internal temperature has reached 160 F.

*Be careful not to overcook Bison as it will cook faster than beef because it contains little fat content.

Quick Bison Chili


    • 1/2 lb. Ground Bison, 1 tablespoon olive oil, 1 medium onion chapped, 4 garlic cloves chopped, coarse salt and ground pepper, 2 tablespoon tomato paste, 3 tablespoons chili powder, 1 tablespoon cumin, 28oz can dried tomatoes in juice, 28oz can pinto beans rinsed and drained, grated cheddar and sliced scallions for serving

 Cooking Directions

    1. In a large, heavy-bottomed saucepan, heat oil over medium-high. Add onion and garlic, and season with salt and pepper. Cook until softened, 3-5 minutes.
    2. Add tomato paste, chili powder and cumin. Cook, stirring, until mixture is fragrant, about 1 minute. Add bison, and cook, breaking up with a spoon, until no longer pink, about 3 minutes.
    3. Add tomatoes (with their juice) and beans. Bring to a boil over high; reduce to a simmer, and cook until chili is slightly thickened, 10-15 minutes. Serve with toppings.
